Hi, My name is Dia, and I am a brain surgery survivor many times over. I have been diagnosed over the years with, in addition to my arachnoid cyst and hydrocephalus, inflammatory arthritis, brain stem kink, cerebellum sagging, enlarged liver and spleen and soooo much more! I truly feel that I have been sustained all of these what I consider to be my "extra years" because I changed my diet dramatically. 
I had a lot of fun making these for Superbowl night last Sunday. My intention was to create an entire blog focused on a vegan Superbowl party, but instead I will be posting each dish recipe by recipe throughout the next couple of weeks.
The only slightly complicated part of these tartlets is making the mini pastry cases, and if you don’t have the time you can find them at any food store. Unfortunately, they don’t come vegan.
These chocolate cookies turned out fantastic and quite large! I even feel making them vegan makes them taste better than my usual cookies. These aren’t fat free by any means, so prepare for an evening of overindulgence and bake away!
