Fourth day of Christmas-Cinnamon & Peanut Brittle

If anyone is looking for a last minute gift idea, this is most definitely it. Not only is it delicious, but it only takes minutes to make–In the microwave and all! Are you gasping? Isn’t it brilliant? It takes about 10 minutes to prepare and make and another 15-30 minutes for it to cool. If you want to impress friends and family with boxes of homemade candy, be sure to give this recipe a go. On the fourth day of Christmas Dia gives to you her Cinnamon and Peanut Brittle.
I need to mention I used golden syrup not corn syrup which is the common ingredient in American recipes. I used golden syrup for two reasons: 1. It is a lot better for you than corn syrup and many have an allergy to corn syrup 2. Corn syrup is not widely available in the UK. I guess that was three reasons really.
1 cup unrefined caster sugar
1/2 cup golden syrup (must be golden syrup)
1/2 cup peanuts
1 tsp vegan spread
1 tsp cinnamon
pinch of salt
1 tsp baking soda
1/2 tsp of vanilla extract
Line a baking tray with grease proof paper.
In a microwavable bowl combine the sugar with syrup and mix until well blended.

Microwave uncovered for 3 minutes.
Stir
Microwave for a further 2 1/2 minutes.
Stir in peanuts, vegan spread and cinnamon.
Microwave for another 2 minutes.
Rapidly stir in baking soda, salt and vanilla extract until light and foamy.

Pour onto baking tray and spread thinly with metal spoon or spatula.
Let the brittle cool completely before breaking into pieces.
Place pieces into gift boxes and wrap with ribbon for a posh touch. ![]()

Your friends will drool over this cinnamon and peanut brittle. To me it makes me think of the American candy Werther’s Originals. Very similar flavor.

This is delicious – if it’s like the brittle I’ve had before, enjoy it, eat it slowly and be careful not to crack a tooth ! Well done Dia, another great recipe !

It is truly blessing to have found your site young lady. Actually I’m only a year older..hehe. But my husband is much older..so I act older. Anyways I have allergies for years now, and am inspired by your work. Just tried your pizza recipe, and had to augment it a little myself but it came out great. Thankyou…thankyou…thankyou Dia.

Thanks Kari, that’s sweet. Which pizza, the macrobiotic one? I love the taste of hummus as the sauce for that.
