Chick Bean Nuggets
Posted by Administrator on February 13th, 2009. Filed under: Macrobiotic, Vegetarian.Here is a quick and easy recipe for those of you out there that feel exactly like me: anemic and over-drained (vp shunt).
1 400 g can of chickpeas
1 400 g can of haricot beans
1 cup of breadcrumbs
2 teaspoons of corn flour
2-3 tablespoons of olive oil or Safflower Oil
1 tablespoon of chili powder
Drain the haricot beans and chickpeas.
Place in food processor along with chili powder, garlic and onion granules.
Blend well together and form into a dough like consistency.
Place in refrigerator to set for a couple hours.
Take the dough and break into little pieces.
Mold into a nugget type shape.
Mix the corn flour into the breadcrumbs.
Dip each nugget in the olive oil and then into the breadcrumbs/corn flour.
Fry in griddle until both sides are golden brown.
Serve with guacamole or ketchup.

mmmm, these look really simple and REALLY good! I admit I’ll probably try these in my deep fryer. (it makes me feel a tiny bit better that there’s olive oil in my deep fryer. just a tiny bit.)

I tried these last night Dia, they turned out perfect. I used corn flour mixed with progresso bread crumbs from the Let’s Eat store. I cheated!
