Muffins

Some call me the “muffin queen” because I am constantly baking up a storm. I often get asked how I do it, and really muffins are some of the easiest treats to make.

I am going to give you the most basic recipe for 12 muffins. You can add 250 grams of whatever you want(blueberries, chocolate chunks, chocolate chips, apples, etc), and even switch the type of sugar to brown or molasses.
2 cups of plain flour
1tsp of baking soda
2tsp of baking powder
1 cup of milk (or oat milk)
3/4 cup of butter (or vegan spread)
3/4 cup of caster sugar
2 eggs (or 2 energ egg replacers)
250 grams of your fresh fruit of choice
Preheat your oven to 180° Celsius
Sift the flour, sugar, baking soda and powder together. In a separate bowl, mix the milk, eggs and butter.
Pour the fruit in the first bowl with the flour/sugar and then add the milk, eggs and butter. Take a wooden spoon and stir no more than 20 times around. This ensures the moistness of the muffins.
Fill up a 12 muffin tin with the mixture, and bake for 20 minutes.
Now if you want high top muffins here are a couple of tricks I use:
-Leave one of the tin slots empty and fill it with water instead. The steam helps the muffins to rise even higher.
- Preheat the oven to 220° Celsius instead and once you put the muffins in the oven, turn it down to 180°. This initial blast of heat will help those muffins to get a nice high top.
